Madeleines

  • 2 eggs
  • 85g sugar
  • 33g milk
  • 125g flour
  • 5g baking powder
  • 1ea lemon zest or vanilla pod
  • 125g melted butter

Beat eggs with sugar until fluffy. Add milk and sifted flour + baking powder, then lemon zest and finally melted butter.

Let the dough rest for 24 hours.

Bake 4 min at 225˚C, then 6-8 minutes in oven off.
